Potatoes & salmon

NOTES: This is a very hearty and tasty dish.
DIET: Pescatarian, contains dairy
PREPERATION TIME: 10 minutes
COOK TIME: 30 – 40 minutes
SERVINGS: 2 people
INGREDIENTS: ( ) total
- Red potatoes, 10 small or 6 medium red potatoes
- Mayonaise, 3 tablespoons
- Red onions, 2 slices, thinly chopped
- Dill, 1 tablespoon, fresh
- French Dijon mustard, 1 teaspoon
- Crushed pepper, a pinch
- Salt, to preference
- 2 wild caught salmon pieces
- Cucumbers, few slices
- Meat rub seasoning, we prefer the McCormick Grill Mates Montreal Steak Seasoning.
DIRECTIONS:
- Season the salmon with meat rub seasoning of your choice or our choice of McCormick Grill Mates Montreal Steak Seasoning.
- Place your salmon pieces in a hot frying pan, skin down to fry the skin in medium heat.
- Cut your potatoes in half to boil, do not peel your potatoes, boil your potatoes in salt water.
- When potatoes are fully cooked, let them rest, take each half and half it one more time.
- By dow your salmon skin should be fully cooked and crunchy, turn over and golden the other side of salmon, do not cover.
- By now your potatoes should be cooled. Let’s make them delicious!
- Take 3 tablespoons of mayonnaise, 1/2 teaspoon of Dijon mustard, the fresh dill, some crushed pepper, mix well with a fork, add a pinch of salt if desired, now add your sauce and thinly chopped onions to your cubed potato chunks. Bring all ingredients together well.
- By now, your salmon should be fully cooked and ready.
- Serve your potatoes, place your salmon next to it and garnish with a few slices of cucumber.
